I finally discovered a way to make french toast without eggs. Yay! French toast is so bad but so good. This for me is only for a special treat, but everyone needs a treat now and again. (If my husband is reading this…a special treat such as Mother’s Day this Sunday…🙋)
1 cup almond milk
Tablespoon chia seeds
Tablespoon maple syrup
Coconut oil for frying
Here’s how I made it. I took a cup of almond milk, added a heaped tablespoon of chia seeds and a tablespoon of maple syrup, a teaspoon of cinnamon (or less depending on personal taste) and let it sit for a bit to let the chia seeds soak up the liquid. After a few minutes I whizzed up the mixture in a blender. You could just use a hand whisk. Pour into a bowl and soak as many bread slices as you want both sides.
Heat coconut oil in a pan and then fry the bread on each side for a good couple of minutes. Mine was still a bit soggy in the middle so after I’d toasted it, I put it to one side for a minute and then whipped it back in the pan for another go. This seemed to do the trick.
I topped mine with maple syrup (obviously), banana, berries and almond slices, but you do you!
